Pico de Gallo

   Fresh salsa or Pico De Gallo is a summer staple when the tomatoes start to ripen and is best served immediately after making it – don’t worry it usually doesn’t last long enough to worry about storing anyway! This will be one of easiest summer dishes you ever make – and don’t tell the kids, but it’s awfully healthy.

Ingredients:

(Makes about 9 cups of salsa)

4 pounds, ripe beefsteak or plum tomatoes, chopped (with or without skin)

3 cups, chopped onion

1 cup, chopped fresh cilantro

3 small jalapeño peppers, seeds removed, chopped (use hotter peppers if you prefer)

6 tablespoons, freshly squeezed lime juice

6 cloves of garlic, minced

1 teaspoon salt

Directions:

Stir all ingredients and serve immediately with chips or fresh veggies.
